Food

I've really enjoyed spending time in the kitchen lately.
It is quickly becoming one of my favorite hobbies! Here are some recent kitchen adventures:



Veggie Stir Fry with fresh summer squash! Yum!



Zucchini bread--seriously delicious! Banana bread is another fave.


Vegetarian Chili...a new favorite staple in our house. It is SOO good!

Roasted tomato and eggplant pizza. Even the dough is from scratch--so tasty!


Each batch of dough makes enough for two pizzas.
We enjoyed this mushroom, pepper, and olive pizza later in the week. Yum!

Lesha and Ty


Concluding the year of weddings for the family (Krys, Linsey, and Lesha back to back!), my stepsister Lesha married Ty in September. Unfortunately, Becca and I weren't able to make it to the wedding festivities but we love these two so we must commemorate! Congrats you two!

Shelly and Zach

Shelly and Zach were married at the end of the summer and I need to give a shout out to these two people whom we love! Shelly and I met at the Larry H. Miller Group and I am better for having her in my life! We've seen Costa Rica, dishwashers, Arizona, new jobs, lots of lunch dates, and many a girls night out together. I love this woman and look up to her as an example for so many reasons! I couldn't be happier that she and Zach are together. He is a great guy and she a great gal--we loved sharing in this day with them!

Linsey and Vince

My step-sister Linsey and her partner Vince were married on September 12th at a beautiful ceremony in Red Butte Gardens. It was a lovely day. Congrats you two!

We're sorry to report our fish (whitefish and goldfish, respectively) lasted only a week. But a happy, lovely week it was!

Life: In Pictures

I could talk about what we've been up to for the past little while, but why not SHOW it?! In an effort to take a snapshot of life as we know it, here is our life in pictures right now--a few things that we can't get enough of! (this post was supposed to be written in September, alak)


We are total Gleeks! Both Becca and I have a musical background. I was in show choir, chamber choir, and A'cappella (acafellas?!) myself and loved every minute of those robe-wearin' adventures. Becca was in the coveted Madrigals as well as chamber choir and a laundry list of community and school musical theatre projects. In additiona to that, I want to be Sue Sylvester when I grow up. This show is for us! The complete first season came in the mail mid-September and we got right to work!!

If there is one show that takes the cake for us, however, it must be The Office!! We know there are naysayers out there who don't like this show anymore, citing that it has lost it's funny. We are not those people--this show continues to make us laugh out loud. We own all the seasons shamelessly! The picture above is a snapshot of the exact moment when we opened the door to a weird knock only to find that there was a package on the front porch. The Amazon order had come two weeks early and season six was here! We literally jumped up and down. Yes--it's that bad! Or, is it that GOOD?! :)

We love The Office so much that it just seeps into our everyday interactions. Often we will run through dialogue or scenes together because we have them memorized. We think it is pretty hilarious but, admittedly, sometimes our friends have no clue what we're doing if we quip a quote at them. This picture is one of my favorites. This is our meal calendar--we use it to plan out meals for the week. Saves us on shopping and money and expands our options--we love it! One day I went to get the meal calendar updated and I found that Becca had already updated it. Hey, it's Prison Mike!

We are obsessed with these right now. We're now going on 4 months sans carne. While we love our new vegetarian diet sometimes we find ourselves wanting to chew on something hearty. MorningStar is the best brand for us. These fake chicken patties have kept Becca sane! Their veggie burgers are delicious as well. This is one of those staple "always have in the freezer" things for us right now.


I feel like this picture should just speak for itself. If it doesn't, immediately go to Netflicks or your neighborhood blockbuster and rent every season of Dexter (not for kids, though). This is the best television show ever. That's right: ever. It is better than LOST, Heroes, anything. We watched seasons 1-4 in just under two weeks. That is forty-eight episodes in two weeks! We are obsessed and we don't regret it. This show, airing on Showtime, is the sole reason for our recent cable television purchase. Yeah, it's that bad!

Mmm.... bread. Lately we can't get enough of zuccini and/or banana bread. Both homemade (by me!) and both absolutely delicious.
Yess.... finally the diet soda world is exploding! We are big on diet sodas because we feel it helps us rationalize our soda intake. Diet Mountain is a current favorite!

Back to School, Back to Reality

Wondered why you haven't heard from us? Here's why!

Both Becca and I went back to school at the end of August. It didn't really feel like a 'back to' school as much as it did just a 'keep on keepin on' because Becca had a math class over the summer and I taught two classes on campus. However, we were both shocked and apalled by how much busier the fall semester really is! Becca is taking full time classes as well as working two jobs--one at the ASUU daycare and the other as a nanny for the Straussberg's. Kathy is in her second year of her masters program at the University of Utah in the Department of Communication.

This semester brings on thesis work, GSAC responsibilities, and more teaching for Kathy. This semester I am teaching Negotiation and Interviewing as well as an intro level survey course for Speech Comm theory. The former is excellent, the latter is taught on Saturdays which is less than desirable.

Becca is in class on Tuesdays from 10:45am- 7:00pm with no break. She is a soldier! Additionally, she is working on her practicum for teaching for which she is observing day care practices in different locations. Busy busy busy!
